So why does it not mater what order I ranked the sororites that I want to see again? Doesn’t make sense to me

Because you're going back to that number of sororities anyway, so it doesn't matter which rank you put them in. It only matters for your cuts because if you get dropped from a sorority on your "keep" list then you get the next one down added to your schedule. The only time your top ranks actually matter is after pref.
