How do I get recs if none of my family was part of Greek life? I have no idea where to start

Ask literally everyone you know. Your parents coworkers, teachers, parents of kids you babysit, your friends parents. You'd be surprised how willing people are to help!

Okay so if you don't know anyone, look up each chapter on google individually and go to their national website. There should be an area that is like "alumni chapters" and just they are literally everywhere! Contact your local chapter and ask them very politely to write you a letter of Rec. You must send them your transcript and a hot photo of yourself.

a lot of girls I know posted on Facebook saying if anyone was/knows anyone who was in these sororities and would be willing to write me a rec please let me know...you'd be surprised how effective it is!!

They won't shun you. You'll look really naive, though. It's OK for your mom to post on Facebook that you need recs. Don't post yourself, though.
Your mom can help a LOT if she's willing to. She can ask among her friends if anyone is a sorority member. Even your dad can ask around - men have wives, daughters, mothers, sisters who could be sorority members.

Is it too weird or forward to offer to meet a potential info-only rec writer to have coffee or volunteer somewhere with them so that they can know more about our personality? Or would that not make a difference at all?

It's OK. Still, it's better to find someone who knows you or your family. But if you can't, def meet with them.
