How does mixing work

Coming from a freshman planning to rush in the spring who's not super knowledgable with greek life:

How does mixing work? Is it every weekend? How is mixing different from opens? Do all srats mix with all frats?

Additionally, who mixes with who? Does anyone have a good idea of what frats mix with what srats frequently? Are there any that dont mix? Why?
