How and when do the frat pick their sweethearts and girls? How many girls are usually picked and can you be multiple frats “girl”?

Usually sweetheart is someone who hangs around the frat a lot/knows a lot of the guys and is friends with a bunch of them, and/or a girlfriend of one of the guys. One girl is picked for sweetheart.
