THIS IS LONG BUT IMPORTANT:
Dear OP, YES, YOU CAN GET A BID FROM ONE OF THOSE HOUSES and what you described in your post won't happen because that's not really the way it works. Here's the real deal for how the whole week goes: You are not 'picking' houses, and 'dropping' others, you are ranking them. Big difference. The sororities are the ones doing the actual choosing in all this, ranking you and making decisions about who they release. The only time a pnm's ranks really matter is if all or most of her houses want her back. That's when the algorithm incorporates her choices for the next round's schedule.
The algorithm is trying to make sure you have as many houses as possible for each round. So houses you think you are 'picking' might release you and they drop off your schedule, and ones you think you are 'dropping' will show back up if they want you back.
So in your scenario, you rank your houses and 'pick' your top 2, and "If those don’t want me tomorrow, and the other 3 do..." you will get back a schedule with the ones that wanted you.
For the pref round, every pnm at prefs is on those houses' bid lists somewhere. So any house that invites you to pref wants you. You are guaranteed a bid to one of your two as long as you rank both of them. Odds are you'll get your number one but that's not 100%, you may get your second choice. If you only have one pref house and you put it on your card you are getting that bid. Guaranteed.
THERE IS ONLY ONE SCENARIO WHERE YOU AREN'T GETTING A BID AT PREF, AND THAT IS TO ONLY PUT DOWN ONLY ONE HOUSE IF YOU ATTENDED TWO PREFS. The reason for this lies in the bid matching process and Quota Plus. If you are high enough on your number one house's bid list to match with you before they reach quota you go there. If not, the algorithm will try to match you with your second choice. If you are high enough on their list before they reach quota you will go there. If you are not high enough there either, the algorithm will place you with either house (lots of variables there) even when it puts a house over quota, and that's called Quota Plus.

@Q, the process is a two way street. You may like all the houses but you have to like them in a specific order. Just like the houses have to like you in a specific order. If you end up at 2 pref houses you will likely get a house. Panhellenic doesn’t like girls being “cut” after they go to prefs. Maybe start thinking about where you would be happiest rather than how moronic the process is. This is the best process in order for everyone to get a house - especially the less favorable houses that need more girls.

This post is confusing pnms - let me clarify.
When you go and rank for prefs you will rank your houses (1-5). At the same time houses will be ranking pnms.
If you don’t get your top 2 choices DOES NOT mean you won’t go to prefs as you have the ranks 3-5 still. As long as you aren’t dropped by all 5 houses on your list you will go to prefs somewhere
Once at prefs, you will no longer be dropped. If you only pref at one house - you will get a bid from that house. If you are preffing at 2 houses - you will get a bid from one of the two.
If you pref at 2 houses, you will rank your top choices. The houses will rank the pnms. If you are high enough on your top houses list, you will get a bid from your top choice. If you are low on your choice one, but high on your choice two, you will get a bid from house two. If you are low on both your houses list, you will end up at either house depending on factors out of your control.
