I know my house and a few others have events where actives who are in groups on campus hold a sort of "get on board day" but just for the new members. This is basically where the new members can walk around and see what kind of organizations and clubs older girls are in and get involved if they're interested. My house also has committees for different kinds of things that anyone can join if they're interested. Most of these things though are directed towards things dealing with actual involvement in either the house or other organizations as opposed to let's say a book club. Personally, my house doesn't really have any "interest groups" where girls who like do XYZ all hang out at a certain time and I'm pretty sure most other houses don't have anything like that either. However, there are so many opportunities to hang out with your sisters just within the first few weeks of school... You'll have new member modules, chapter, meals, HoCo, gamedays, sisterhood events, swaps, etc. Put yourself out there to try and find some girls who have similar interests as you.
