Everything you put in your old rec packet, but relevant to freshman year. Your resume, your freshman year transcript, pictures, etc. In the real world you need to update your resume every few months to make sure it only reflects your most recent jobs/accomplishments/etc. This is similar. You can probably include stuff you did senior year of HS but our hope for sophomores rushing is that they've done enough notable things with the past year that they don't need to still be bragging about being a JV cheerleader when they were 16. I'm sure you'll have plenty to add!
