Do professors treat Greeks differently than other students? I’m really wanting to pledge but also want to be taken seriously by my advisor and professors.

I’ve personally never noticed an issue with it
The all Greek average is higher than the student body average and the all sorority average is very solid. So if anything they should take sorority girls more seriously than GDIs if they want to stereotype people

not really. maybe profs will roll their eyes a little when 10 ABC's sit in the back of the class gossiping the entire time but if you're respectful and professional then they don't care. also if you're so worried just don't wear letters to class, they literally wouldn't know who's greek and who's not if people didn't wear letters.
