Call the UA Panhellenic office or Greek Affairs office after Labor Day weekend. What you do is fill out a form (often online) with your name, address, grade info and probably some other info. This is distributed to the sororities that are participating in COB. Some of them MAY call you to come have lunch, watch a movie, hang out, meet for coffee. There may or may not be more than 1 that does this. There is no deadline, and no bid day. If a sorority wants to give you a bid/invite you to become a full member, they will do it themselves - no third party. Good news is - it's very informal and relaxed. Bad news is - no guarantees of anything, including an invitation to hang out.
